Chocolate cookies sandwiches with nutty butter cookies dough
These cookies are so delicious and a nourishing filling snack.... a favourite of gorgeous muso, Roy, from the awesome band King Stingray - these guys are soul delicious for your ears!!! @kingstingrayband Listen to them as you cook and then devour your cookie sandwich!
Ingredients
Cookies:
400g black beans, drained and well rinsed (I use organic easy to find in most supermarkets)
1/2 cup nut butter (I use almond and a little crunchy peanut butter!)
1/3 cup water
1/4 cup cacao
1/4 cup coconut sugar
1 teaspoon baking powder
1/2 choc chips (I use vegan ones)
Filling:
1/3 cup nut butter (I prefer almond)
3 tablespoons maple syrup
1/2 cup water
3/4 cup coconut flour
60g protein powder
1/4 cup choc chips
Method
1. Pre-heat oven 170 degrees C and line tray with baking paper
2. Make the cookies: place black beans, nut butter and water into a food processor and mix until smooth (if dry add a little more water). Once smooth add cacao, coconut sugar and baking powder and mix again until smooth. Fold through chocolate chips.
3. Place heaped spoonfuls of batter onto tray - spread out so not too thick as they do not spread during baking. Bake for 17 minutes and let cool on tray. They will feel soft but will harden as they cool.
4. Make cookie dough - gently warm nut butter, maple syrup and water over low heat then transfer to bowl. Add coconut flour and protein powder - stir to combine then add choc chips.
5. Assemble cookie sandwiches - scoop ball of dough and flatten between two cookies to form a delicious cookie sandwich.
Note: make sure you use a nut butter that is not too dry or the mixture may be a little stiff - add extra water if that is the case :).
