Healthy Mars Bar Raw Cake
Well it's that time of the year again and I went in search of the perfect Christmas Lunch cake to make for my amazing work crew and discovered this one. It is raw, delicious and I dare to say good for you - well it makes your taste buds smile! You need time in between creating layers to let them set esp nougat layer
INGREDIENTS
Base:
1 cup walnuts
1 cup shredded coconut
1/2 cup raw cashews
2 tablespoons coconut oil
2 tablespoons raw cacao
1 tablespoon maple syrup
Pinch of salt
Nougat filling:
1 cup raw cashews - soaked for a few hours
1 cup coconut milk (or light coconut cream)
1/3 cup coconut oil
3 table spoons maple syrup
2 teaspoons vanilla extract
Caramel Filing:
1 & 1/2 cups dates (soaked in boiling water for 10 minutes then drained)
1/4 cup coconut milk (or light coconut cream)
1/4 cup coconut oil
Chocolate topping:
1/2 cup coconut oil
1/2 cup raw cacao
2 tablespoons almond butter
2 tablespoons maple syrup
1/4 cup coconut milk (or light coconut cream)
Method (to this delicious madness!)
1. Line bottom of 24cm springform tin
2. THE BASE - place all ingredients in blender/processor and blend until well combined and sprtead evening in base of lined tin. place in fridge to set.
3. NOUGAT FILLING - Place all ingredient in blender and blend until completely smooth. Pour all this deliciousness over the base and place in your freezer to set (this could take some time)
4. CARAMEL FILLING - Place all ingredients in your blender and blend until completely thick and smooth in texture. Carefully spread the caramel filling over the set nougat filling and return to freezer for at least 2 hours to completely set.
5. CHOCOLATE TOPPING - Place call ingredients in your blender and blend away until smooth - you may need to add a little more coconut milk - it will depend on your coconut oil and cacao. You can either spread this layer or make crazy patterns drizzling the chocolate - it's your creation so do what you like.
Place your creation back in the fridge until you are ready to serve! ENJOY and all praise the mighty taste buds
